Weekend Make – Cranberry, Pecan and white chocolate muffins

150g cranberries

6oz Caster Sugar
12oz SR Flour
6oz Butter
2 eggs – beaten
200ml milk
100g pecans whole or chopped
grated rind of a fresh lemon
25g white chocolate drops
In a bowl put the sugar, flour and butter.   Rub together until small breadcrumbs.  Add the egg and milk.   Stir well.   Add the lemon rind, white chocolate drops, pecan nuts and cranberries.
Stir well and put into cake cases in a muffin tin.   This may make more than 12 🙂 
Cook Gas Mark 6 for about 15 – 20 minutes until golden on the top.
