Weekend Bake – Pineapple Cupcakes

Pineapple Cupcakes

8oz Butter
8oz Soft Brown Sugar
4 eggs
8oz SR Flour
tin of crushed pineapple

Pre heat over to Gas mark 4

Cream butter and sugar.

Add eggs one by one with a little of the four to stop seperating.

Stir in the rest of the flour and the pineapple.

Divide between muffin tins.    This makes a really moist cake but if you wish it drier then strain the pineapple ebfore adding 🙂
