Weekend Bake – My version of Southern Fried Chicken 

4 chicken breasts cut into strips
2 slices of brown bread turned into breadcurmbs by using a processor or a grater
Cayenne Pepper 1/2 teaspoon
Smoked Paprika 1/2 teaspoon
Chilli Flakes 1/4 teaspoon
Home ground Black pepper and Salt  good pinch of each
1 egg beaten
Flour put onto a plate to coat chicken
Little oil for frying

Mix together the breadcrumbs, cayenne pepper, smoke paprika, chilli flakes and the seasonings.  (you can add more of the cayenne, paprika and chilli if you want them spicier or hotter)

Place a chicken strip in the flour.  Then into the beaten egg and then into the breadcrumbs.

When all strips ahve been coated heat a little oil in a frying pan.

Place the chicken strips into and cook until golden brown on the outside.

Place onto a baking tray and put into the oven Gas mark 4/5 for about 20 minutes.

Whilst the chicken is finishing off in the oven then prepare any salad, chips or vegetables you wish to serve with the same.

When cooked which you can check with a meat probe then serve as you wish .
