75g of Caster Sugar
4 Tablespoons of Oil (I used ground nut but vegetable oil or sunflower oil will work)
125ml of milk
200g Self Raising Flour
Teaspoon of vanilla essence
200g of Blueberries
Deep muffin tin
Heat oven to Gas Mark 5
Into a bowl put the sugar, oil, egg and milk. Mix well
Add the vanilla essence.
Sift in the flour and stir in.
Add the blueberries and stir in.
Place muffin cases into the tin and spoon in the mixture. This will make about 12.
Cook for 15 – 20 mins or until golden on the top.
Can be served warm with fresh cream or eaten cold.
A healthy option to rich cakes.
