‘Are we making cakes today nanny Angie?’, rings out when my grandsons come. So today Nanny Angie Bakes a Victoria Sandwich.
8oz butter and margarine
8oz Caster sugar
4 medium eggs
Several drops of vanilla essence
8oz Self raising Flour
Jam of Choice
Buttecream (I bought Betty Crokers) but you can make your own using Butter, Icing Sugar and vanilla Essence.
Heat oven on Gas Mark 4.
In a large bowl cream together the butter and sugar. Add one egg and a spoon of flour so when whisking it will not curdle. Continue to add eggs like this until you have added all 4.
Add the rest of the flour and spoon stir in slowly until mixed.
Divide the mixture between two 8inch cake tins. I have loose bottom ones but if you dont make sure that you line your tins with greaseproof paper to help get the sponges out when cooked.
Place in the oven and Nanny Angie Bakes for about 35 minutes. If when touched on the top the cake springs back into place then take out. if not then leave in the over to cook for a further 5 – 10 minutes
Leave to cool before filling. Put on jame and the the butter icing onto one half of the sponge. Place the top layer on and sprinkle with a little caster sugar.
