When your Grandsons arrive and they fancy something different for their lunch, I always plan ahead and have some Jacket Potatoes ready to use. When they arrive they can help finish of Nanny Angie Bakes.
Stuffed Potato Skins.
Potatoes (at least 1 each)
Vegetable Oil or Oil of your choice )Garlic Oil is good)
2 cloves of Garlic – crushed
Thinly cut strips of ham
Salt and pepper to season
Lightly oil and salt the outside of the jacket potatoes and wrap in foil.
Bake in the oven for about 2 – 21/2 hours at gas mark 3.
Check fully cooked. If they are then cut in half and remove the potato. Put into a bowl and add crushed fresh garlic (2 cloves for 4 potatoes), grated cheese, thinly sliced strips of ham, butter, freshly ground salt and pepper.
Mix well and then put back into the empty skins. Put back into the oven at Gas Mark 8 for about 10 mins or until browned on the top.
Serve with salad.
