My weekend make – Coffee and vanilla cream roll

4oz caster sugar
4 large eggs
4 oz self raising flour
3 teaspoons of coffee granules

Butter icing – homemade or bought
(I never measure when I make mine so go by taste)

Heat over to gas mark 7    line a baking tray with greaseproof paper

put eggs coffee and sugar into a bowl and with an electric whisk beat until the mixture becomes creamy and leaves a trail (rather like beating cream)
Stir in the flour
Bake in the oven for about 10 minutes.

Whilst the sponge is in the over lay our another piece of greaseproof paper and sprinkle with caster sugar.

When the sponge is cooked tip out onto the sugared paper, take off the lining paper and then roll it up.  Leave to cool for a while before unrolling, putting in cream and re rolling up again.
