My weekend bake …… Raspberry Jam Swiss Roll

4oz caster sugar
4 large eggs
4 oz self raising flour
Flavouring –  either vanilla or almond essence (I used the latter)

Raspberry Jam ( I used Tesco Finest as gives a rich Jam flavour)

Heat oven to gas mark 7    line a baking tray with greaseproof paper

put eggs, selected flavouring  and sugar into a bowl and with an electric whisk beat until the mixture becomes creamy and leaves a trail (rather like beating cream)

Stir in the flour
Bake in the oven for about 10 minutes.

Whilst the sponge is in the over lay our another piece of greaseproof paper and sprinkle with caster sugar.

When the sponge is cooked tip out onto the sugared paper, take off the lining paper and then roll it up.  Leave to cool for a while before unrolling, putting in jam and re rolling up again.
