My Weekend Bake – Fruit and Nut Cake

Lined 9 inch square cake tin

Oven Gas mark 4/5

8oz Butter
8oz Caster Sugar
4 eggs
7oz Self Raising Flour
1oz Ground Almonds
Almond Essence
3oz Sultanas
2oz Chopped nuts (I used pecan nuts)

Into a large bowl put the sugar and butter and cream.   Add eggs one at a time with a little of the flour.  Beat well until all 4 are in the mixture.   Stir in the remainder of the flour, the ground almonds, a teaspoon of ground almond essence, the sultanas and the nuts.

Pour into the baking tin and place in the oven for 45 – 60 minutes.  Check regularly after 45 minutes so taht the cake does not over cook.

Leave to cool and serve with your favourite brew.
