For this recipe I used Opies Stem Ginger in Syrup.
Preheat Oven to 190C / 375F / Gas Mark 5
Line a baking tray with Greaseproof paper
Ingredients
6oz / 175g Plain Flour
1 teaspoon of Baking Powder
4oz / 125g Butter
3oz Sugar (You can use any sugar granulated, brown, golden brown or caster.)
1 dessertspoon of the syrup from the Opies Ginger
1 teaspoon ground ginger powder
1 egg
5 pieces of stemmed ginger cut into small pieces.

Into a pan put the butter and melt slowly on a low heat. When fully melted place to one side.
Into a bowl put the flour, baking powder, ginger powder and sugar. Mix well.
In a smaller bowl put the ginger syrup and an egg. Beat well.
Into the bowl of dry mixtures pour in the melted butter and the egg/ginger mix. Also add the chopped stemmed ginger.
Stir until all ingredients are well combined.
Spoon onto the greased proof paper.
I made about 8 cookies.
Bake in the oven for 15/20 minutes until firmish to touch and golden.
Leave to cool.
