Fresh Strawberry and White Chocolate chip muffins.

This recipe will make 12 muffins in a large deep muffin tin.

75g of sugar
4 Tablespoons of Oil
1 egg
125ml of milk
1/2 teaspoon of vanilla essence
200g of self raising flour
6 fresh strawberries – hulled and diced
25g of  white chocolate chips (you can add more if you wish)

Heat over to Gas Mark 5

Put cases into a muffin tin.

Into a bowl put the oil, egg, milk and vanilla essence.  Mix thoroughly.

Add the sugar and flour and mix well.    Fold in the strawberries and chocolate chips.

Spoon into the 12 cases.

Cook in the over for about 15mins or until firm to touch.

Serve warm with ice cream or cold with fresh cream.
