Easter Sunday bake – Orange Cupcakes

8oz Butter
8oz Caster Sugar
8oz SR flour
4 eggs
grated rind of an orange and the juice from the same

Heat over to Gas mark 5

This will make 24 muffin size cupcakes

Line a tin with 12 paper cases

Cream together the butter and sugar.  Add the orange juice and rind.

Add each egg individually with a little of the flour and beat in well.

Add in the remaining flour.

Put some cake mix into each case and cooks for about 15-20 minutes until golden on top and spring back when touched.
