Weekend Bake - Ginger apple and Mixed fruit scones
Ginger, Apple and Mixed Fruit Scones
Preheat over 220C 425F Gas mark 7
8oz Plain Flour (220g)
1.2 teaspoon salt
1 teaspoon bicarbonate of soda
2 teaspoons cream of tartar
1 1/2 oz butter or margarine (45g)
1oz Brown sugar (25g)
2oz finely cut apples
1teaspoon of ground ginger (or you can use fresh for a stronger taste)
2oz mixed fruit (50g)
about 1/4 pint of milk (125ml)
Into a large bowl add the plain flour, salt, bicarbonate of soda, cream of tartar sugar and butter.
Rub in the margarine well .
Add the ginger, apple and mixed fruit and stir well.
In the centre of the dry ingrdients make a well and add some of the milk stir and keep adding milk until the mixture starts to form a dough.
Roll out to about 1/4 inch thick and cut with a cutter.
Bake in the oven for 10 - 15 minutes or until golden on the top and firmish to the touch.
Serve hot or cold with cream and jam if wished
