Chocolate Chip Muffins

2 eggs, lightly beaten
125g (4oz) plain yoghurt
125ml (4 floz) strong brewed coffee
125ml (4floz) Milk
250g (*oz) self raising flour
250g (8oz) caster sugar
57g (2 1/2 oz cocoa powder)
pinch of salt
100g (3 1/2 oz) chocolate chips

12 hole muffin tin  (I lined with muffin cases but if you wish to bake in the tin then please remember to grease well with a little butter)

Combine the eggs, yoghurt, coffee and milk into a large bowl

Sift together the flour, sugar, cocoa powder and salt and stir into the milk mixture.  Stir in the chocolate chips.

Divide between the 12 cases.

Bake the muffins in a preheated over at 200degrees C (Gas mark 6) for about 10 minutes then reduce to 180 degrees C (Gas mark 4) for about 15 minutes.
